Ingredients

  • 3 largechicken breasts
  • 1 1/2 cupdiced yellow onion
  • 2 candiced tomatoes (do not drain) (I prefer the petite diced tomatoes because I like smaller pieces)
  • 1 canlight red kidney beans (do not drain)
  • 1 cancorn (drained)
  • 1 cuppicante
  • 3/4 cupwater
  • 4chicken bouillon cubes
  • 1 tspcumin
  • 1/2 tspgarlic powder
  • 1a sprinkle of chili powder, salt, and pepper

Steps

  1. 1

    Place all ingredients in crockpot, but be sure to give everything a good stir BEFORE adding chicken breasts.

  2. 2

    Cook on low about 8 hours or until chicken is done.

  3. 3

    Remove chicken, shred chicken very well, replace chicken.

  4. 4

    Serve with shredded mexican cheese and crushed tortilla chips (I recommend Tostitos thin and crispy).
