Ingredients

  • 5 lbNew York strip roast
  • Crust/glaze
  • 1 ozDijon mustard
  • 1 tspbalsamic vinegar
  • 1/4 ozWorcestershire sauce
  • 1/2 tbsphoney
  • 1/2 tbspextra virgin olive oil
  • 1 pinchsea salt
  • 2 pinchfresh ground course black pepper
  • 1 pinchwhite pepper
  • 3 pinchpaprika
  • 1 tbspgarlic powder
  • 1 ozwell packed brown sugar

Steps

  1. 1

    Take out the roast at least 1-2 hours before cooking, and let it sit out to get to room temp

  2. 2

    Cross score the fat cap on the roast

  3. 3

    preheat oven too 500°F

  4. 4

    About 45 mins before cooking make and apply crust/glaze

  5. 5

    Place roast fat side up in broiling pan with small amount of water in bottom (1/2 cup or so) cook for15 mins at the 500

  6. 6

    Turn down oven to 300 while roast is still in. Cook for 12-18 mins per pound

  7. 7

    Take out roast and loosely tent in tinfoil for 15-20 mins to allow juices to redistribute before cutting
