I wet aged this roast for 2 months. I planned this for my girlfriend's birthday dinner.

Take out the roast at least 1-2 hours before cooking, and let it sit out to get to room temp

Cross score the fat cap on the roast

preheat oven too 500°F

About 45 mins before cooking make and apply crust/glaze

Place roast fat side up in broiling pan with small amount of water in bottom (1/2 cup or so) cook for15 mins at the 500

Turn down oven to 300 while roast is still in. Cook for 12-18 mins per pound

Take out roast and loosely tent in tinfoil for 15-20 mins to allow juices to redistribute before cutting
