Oats khichdi- healthy, nutritious and quick to make khichdi made from oats, yellow moong dal and mix of veggies and spiced with few basic indian spices.
It's is one of my favorite ways to include Oats in my diet.. Vegetable Oats Khichdi is made every week in my kitchen. Mainly because oats are one of my favourite cereals and also because it is loaded with vegetables. A full meal on it's own so comforting and really quick to make. i served it with curd, pickle and a grizzle of lemon juice....

Ingredients

  1. 1 tablespoonsoil
  2. 1 teaspooncumin seeds
  3. 1 pinchasafoetida
  4. 1/3 cupchopped onions
  5. 1/2 teaspoonginger, minced
  6. 1/2 teaspoongarlic, minced
  7. 1green chilli, finely chopped
  8. 1/3 cuptomatoes, chopped
  9. 1/3 cupchopped carrots
  10. 1/3 cupchopped broccoli
  11. 1/3 cupgreen peas - fresh or frozen
  12. 1/2 cupmoong dal (split and husked)
  13. 1 cupoats
  14. 1/4 teaspoonturmeric powder
  15. 3 cupswater
  16. to tastesalt
  17. 2 tablespoonschopped coriander leaves
  18. 1 teaspoonlemon juice

Steps

  1. 1

    Heat Oil in a pressure cooker.

    Once the oil is hot, add in cumin seeds and asafoetida, and let them crackle for a few seconds.

    Then add cup chopped onions and saute onions till they turn translucent

  3. 3

    Add ginger- garlic, chopped green chilli and saute for few seconds.

    Now add hopped tomatoes and saute till tomatoes soften.

  4. 4

    Further add the all veggies, saute veggies for a minute.

  5. 5

    Add oats and washed and drained moong along with 3 cups of water, turmeric powder, red chilli powder and salt. Mix well.

  6. 6

    Cover the cooker with lid and pressure cook on medium flame for 5-6 minutes, and when pressure settles down on it's own, remove lid and stir the khichdi.

  7. 7

    Serve oats khichdi hot with a garnish of chopped coriander and drizzle some lemon juice on top of oats khichdi.

    Relish this healthy and tasty khichdi with some salad, pickle, papad, or curd...
