Cut sausage in bite size pieces. Pan fry and remove to paper towel. Saute onion, pepper, and celery in drippings.

Drain tomatoes and chopped, saving juice. Combine juice and tomatoes sauce, adding enough water to make 3 1/2 cups of liquid.

Combine all ingredients and stir to prevent rice from sticking.

Bring to a boil turn down to a simmer and cook for 20 to 25 minutes or until rice is thoroughly cooked.

Stir frequently. Serves 6 to 8
