Mexican Red Rice with Vegetables

I love this recipe because it was the first thing I learned to cook. My mom and great-grandmother passed it down to me. I hope you enjoy it.
Mexican Red Rice with Vegetables
I love this recipe because it was the first thing I learned to cook. My mom and great-grandmother passed it down to me. I hope you enjoy it.
Steps
- 1
Rinse the rice and let it dry in the sun. Then rinse the canned vegetables, tomatoes, and onion.
- 2
In a blender, blend the tomatoes, garlic, onion, and salt. If you like, you can add a bouillon cube. Add a little water and blend until smooth.
- 3
In your rice cooker, add enough oil to fry the dry rice first. When the rice starts to turn golden, add the canned vegetables. When the rice changes color, add the tomato sauce.
- 4
Next, add hot water if you like, enough to cover about 3/4 of the rice cooker. Cover and cook on low heat until the water is absorbed.
