Turned out great! I'll boil the peppers closer to 15 minutes next time; otherwise, perfect for our taste!

Preheat oven to 350°F

Brown a 1/2 pound of beef adding seasonings to taste (Garlic salt, onion powder,...). Set aside for now.

Boil green bell peppers for 10-15 minutes (seeds and membranes removed, and cut in halves).

Prepare Spanish Rice per instructions on the box (25+ minutes).

Add browned beef and 1 can of petite diced tomatoes to prepared rice. (I like to add the browned beef while the rice is cooking, and add tomatoes toward the end of cooking the rice).

Stuff the pepper halves with Spanish rice, meat, and tomato mix. Top with your preferred cheese (I chose shredded Monterey jack and mild cheddar).

Place foil over cookie sheet and put stuffed peppers on the sheet. Bake stuffed peppers for 10-15 minutes. Remove stuffed peppers from the oven and enjoy!
