Ingredients

  1. 1Cauliflower
  2. 1Canola oil, enough to sauté cauliflower
  3. 1Pine nuts (can be lightly toasted in oven)
  4. 1Currants
  5. 1 cupFlour
  6. 1 cloveGarlic -crushed
  7. 1Parsley coarsely chopped
  8. white wine vinegarette
  9. 2 tbspHoney
  10. 1/4 cupWhite wine vinegar
  11. 1 tspDijon mustard
  12. 3 tbspExtra virgin oil

Steps

  1. 1

    In a large heavy pot heat canola oil over medium heat until temps reach 350°F

  2. 2

    In another large pot bring water to a boil. To blanch florets prepare a ice bath and keep next to stove.working in small batches. Boil cauliflower for 2 mins. Then drop cauliflower in ice bath remove and towel dry

  3. 3

    Combine flour salt, pepper and garlic in large resealable plastic bag. Shake until coated. Sautéed florets in oil

  4. 4

    Mix ingredients for vinaigrette. Toss in pine nuts, currants, and parsley
