Ingredients

  1. 2 mediumzucchini
  2. 2button squash
  3. 150 gramsbutton mushrooms
  4. 250 gramscherry tomatoes
  5. 3 clovegarlic
  6. 50 gramskalamata olives
  7. 2 tbspfresh rosemary leaves
  8. 300 gramschicken thighs
  9. 1ground black pepper

Cooking Instructions

    Preheat oven to 190 C (374 F)

    Halve the zucchini and cut into wedges, slice the button squash, and place them along with the mushrooms and cherry tomatoes into a baking dish.

    Scatter garlic, olives, and rosemary over the top. Nestle the chicken cutlets into the vegetables. Spray lightly with an olive oil spray. Grind over some pepper

    Bake for 35-40 minutes or until chicken is golden and the vegetables are tender.
