  1. Main Ingredients
  2. 2/3 cupchopped roma tomatoes
  3. 1 3/4 ozreduced fat feta cheese, crumbled
  4. 1/2 lbboneless tilapia filets
  5. 1 1/2 tbspminced garlic
  6. 2 tbspparsley
  7. 1salt and pepper
  8. 1 tspolive oil, extra virgin
  9. 1nonstick cooking spray

    Preheat oven to 400°F

  2. 2

    Lightly coat a medium baking dish with nonstick cooking spray.

  3. 3

    Mix garlic, olive oil, parsley, tomatoes, and feta in a medium bowl.

  4. 4

    Lightly coat both sides of tilapia filets with nonstick cooking spray.

  5. 5

    Season both sides with salt and pepper.

  6. 6

    Lay filets side by side, barely touching, in prepared baking dish.

  7. 7

    Top evenly with tomato mixture.

  8. 8

    Bake 13-17 minutes, or until fish flakes with a fork and is no longer translucent.

  9. 9

    Serve immediately.
