Ingredients

  1. Main Ingredients
  2. Chicken Thighs (preferred)
  3. 1 canCoconut Milk
  4. 1lemon grass (optional)
  5. 10curry leaves
  6. Paste
  7. 10dried chilies (deseeded)
  8. 4shallots
  9. 3Garlic Gloves
  10. 1.5 inchgalangal
  11. 1 tbspdried shrimp
  12. 1 bunchcoriander roots & leaves
  13. 1lemon grass (optional)
  14. Optional
  15. 1 tspcurry powder
  16. 1 tbspchili oil
  17. 1 tbspthai curry paste (optional)
  18. 1 inchtumeric
  19. Chilli oil (optional)

Steps

  1. 1

    Blend the ingredients and make the paste coarsely, not too fine.

  2. 2

    In a big pot, add 2 tbsp oil, add paste in and cook for about 2 mins.

  3. 3

    Add chicken in, mix well and cook for about 4 mins.

  4. 4

    Add 1/3 of coconut milk from the can to the pot.

  5. 5

    Add curry powder, salt, curry leaves and thai curry paste (optional).

  6. 6

    Cook for another 5 mins, add the chili oil in.

  7. 7

    Cook on low heat for another 10 mins.

  8. 8

    Add the rest of coconut milk in. continue cooking until chicken is cooked through.

  9. 9

    When done, garnish with coriander and serve.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
