Mutton Mandi is a traditional meat and rice dish from the Middle Yeast and is fondly eaten all over the Arabian Peninsula. The wors Mandi comes from the Arabic wors, nada, it means dew and reflects the dewy flavor of the meat used in preparing the dish. It's precise origin is Yemen, but now it is eaten in many parts of the Asian subcontinent including Pakistan and some parts of India. The traditional Mutton Mandi recipe is prepared by roasting mutton from a small sized and young lamb, to further enhance it's flavor. Sometimes Mandi is also prepared using chicken, but the traditional Mandi dish consists of mutton prepared in a tandoor. Raisins, almonds, cashews and nuts are also added for garnishing.

Ingredients

  • 500 gMutton
  • 400 gmRice
  • Salt as per taste
  • 2Onion finely chopped
  • 1 tspCumin
  • 2 piecesGreen Chilli
  • 2 tbspGarlic Chopped
  • 1 tspRed Chilli Powder
  • 1 tspDry Ginger Powder (sonth)
  • 1 tspCoriander Powder
  • 1 tspCumin Powder
  • 2-1/2 glassesHot Water
  • 1 tspTurmeric
  • 1 tbspGhee
  • 1small bunch Coriander
  • 2 tbspmint
  • 10Almond chopped
  • 1 tbsptomato puree
  • For Mandi masala
  • 2Bay leaf
  • 8Cloves
  • 6Cardamom
  • 2Black Cardamom
  • 2Cinnamon (1/2inch)
  • 1 tspCumin powder
  • 1 tspCoriander powder
  • 3/4 tspRed Chilli flakes
  • 1/2 tspAniseed powder

Steps

  1. 1

    In a pot, add and marinate the mutton, salt, Mandi Masala, turmeric, vegetable Oil 2 tbsp
    Keep in the refrigerator for 30 minutes

  2. 2

    A cooking pot, add vegetable Oil, onion, cumin, salt, green chilli and fry it until light brown.

  3. 3

    And add roughly chopped tomato and let it cook till it turns mushy

  4. 4

    Now add, garlic chopped, marinated mutton, red chilli powder, ginger powder (sonth), coriander powder, cumin powder and cook it for 5 minutes

  5. 5

    Now add, hot water in it and steam for 30-40 minutes on low flame

  6. 6

    After steam let the mutton out and add rice in the pot and cook for a while.

  7. 7

    Afterward, add mutton on the surface of rice and steam

  8. 8

    In the end place a foil paper in the middle of rice with ember and butter, Coriander leaves and mint leavesand cover it for a while.

    Garnush with chopped almonds an your tasty Mutton Mandi dish is ready to serve
