Tuna Pie with a Single Crust

Chop the onions and red bell pepper, then cook them in a pot with a little oil.

Boil two eggs until hard-cooked (about 10-15 minutes).

Dice the tomatoes into small cubes. Add them to the pot once the onions and bell pepper are cooked. Keep in mind the tomatoes will release liquid.

Quarter the olives and add them to the pot.

Add the tuna and the chopped hard-boiled eggs. Cook for a few minutes until it comes to a boil. Turn off the heat and season with black pepper, paprika, and nutmeg, or your preferred spices. Let the filling cool so it doesn't break the crust when assembling.

Stretch out a pie crust by hand and place it in a baking pan greased with a little oil or nonstick spray. Pour the cooled filling onto the crust.

Beat the remaining two eggs with a fork in a cup until smooth. Pour them over the pie and bake for about 20 minutes. The filling is already cooked, so you just need to bake the crust.
