Steps

Peel yam, dice to desired shape and wash, drain water and soak yam in a salty water till you are ready to fry

Heat up frying pan, add veg oil and once its hot; remove yam from salty water and drain then start frying

Once yam is tender and crispy, remove from oil and drain in a paper towel and set aside
- 4
For egg sauce; dice tomatoes, onions and pepper; reduce oil from the frying pan and heat it up on fire
- 5
Once its hot, first add onion and fry for about a minute before adding tomatoes and pepper
- 6
Allow it fry for another 3 minutes; while you are at it, break eggs and whisk, add dash of salt and whisk
- 7
Pour whisked egg into tomatoes sauce and allow it cake abit before scrambling once its done, turn off heat and serve with fried yam
