Steps

Wash plantain, peel and cut into desired shape, toss salt into the plantain and shake then set aside

Heat up veg oil and once its hot, start frying your plantain till its tender and brown; remove from heat and set aside in a drainer

Heat up frying pan, add little oil; break eggs in a small bowl, dice onion and pepper then add into the egg bowl, add salt and whisk everything together

Once the oil in the frying pan is hot, add whisked eggs and fry till its caked and cooked through, remove from heat and serve with fried plantain
