This is a local Indonesian dish that is getting more difficult to find in city areas. However you still can find it in some small coastal villages in Java island. It is indescribably yummy to serve with warm rice, a good dollop of sambal and some crunchy raw vegetables (lalapan) such as cucumber and cabbage

Dilute the tamarind paste and separate it from its seed
- 2
Mix all the ingredients in a pot or wok except for the sugar
- 3
Cook in medium heat until it boils
- 4
Once boiling, lower the heat and stir for a while then cover the wok or pot
- 5
At this stage, the squid will release its water, just keep on cooking and stirring
- 6
Wait until it dries then taste it. Turn off the stove and add sugar
