Freaking Healthy Cauliflower Crust Pizza

If you are on a weight-management diet, this insanely delicious pizza will help you get through it. I am using pepperoni as a baseline, but obviously you can put whatever toppings on that you like. The main take away here is that it is a low carb option to those delicious Totino’s Party Pizzas. Cauliflower is the new kale, and it is glorious! It will also make you fart less than the leading brand. This claim is not scientific. I just assume this is the case.

Also, to be fair, this is not actually my recipe; but the rest of my recipes are.

Ingredients

  1. 2 cupsriced cauliflower
  2. 1-1/3 cupreduced fat shredded mozzarella, divided
  3. 3/4 cupgrated Parmesan cheese
  4. 1egg
  5. 1/2 teaspoonItalian seasoning
  6. 1/8 teaspoonsalt
  7. 1/2 cupno sugar added tomato sauce
  8. 10 slicesturkey pepperoni

    Preheat oven to 425 degrees

  2. 2

    Place riced cauliflower in microwave safe dish, uncovered. Microwave for 10 minutes, stirring halfway through. Let cool, then mix in 1/3 cup mozzarella, Parmesan, Italian seasoning, egg, and salt.

    Form cauliflower mixture into a circle, about 1/4 inch thick, into a parchment-lined baking sheet or pizza pan.

    Bake until edges are browned, about 20 minutes.

  5. 5

    Top crust with tomato sauce, remaining mozzarella, and pepperoni.

  6. 6

    Bake until cheese is melted, about 7-10 minutes.

I cook for my family every Sunday. I love making soups in particular in my slow cooker during cold months. I think my pallette sets the standard and anyone who disagrees has a mutated pallette. My wife disagrees.
