Whenever I visit European countries in a cold season, mushroom soup is a great treat for me. From the inspiration at some restaurants, I made one by myself.

Whenever I visit European countries in a cold season, mushroom soup is a great treat for me. From the inspiration at some restaurants, I made one by myself.

Slice an onion. Cut mushrooms in pieces. You will use a hand blender later, so no worries if they are small enough or not.

After heating a pot, put butter in it. Then stir fry the sliced onion until it turns slightly brown.

Pour milk in the pan, before it boiled, put the cut-mushrooms in.

Once the mushrooms become softer, use a hand blender until all becomes smooth. Pour yogurt in and keep the pot heated.

Drop a cube of consomme and let it dissolved. Taste the soup and add some salt if you want.

Pour the soup in a cup, add some olive oil on top and dried parsley to make it look nice.
