In a bowl add all the ingredients in a bowl except the belly pork, into a bowl and mix well.

Cut the bone off the length of the belly pork. And throw away

Slice the belly pork across the length into 1-2 inch pieces

Cut the onion into rings

In an oven proof dish use tin foil in the bottom and grease with some olive oilCut the onion into rings

Along the dish place one piece of belly pork with the skin side on top and then a piece of onion in between in two rows

Then with a spoon cover the top of the belly pork sticking up all the way along

Add this with a lid in a preheated oven on medium heat for 45 minutes. Then turn the heat down a little and take the lid off and cook for about 15 minutes.

When it's done place the belly pork on a serving dish and scoop up the juices in the bottom and pour over belly pork.

Serving with some new potatoes and veg
