Heat the pan, then add olive oil and sauté the minced garlic until fragrant.

Add the chili slices and the white part of the scallion, and continue to stir-fry over low heat.

Add the marinated chicken pieces and stir-fry quickly over high heat until the surface of the chicken turns white.

Add the seasonings (soy sauce, rice wine, granulated sugar, water) and stir-fry the chicken pieces until they are well-flavored.

Finally, add the green part of the scallion and stir-fry briefly until slightly cooked. Reduce the sauce until it thickens, then serve.
