Cashew Coconut curry
In southern and western India, coconut is found on a large scale and hence it is used in cooking a lot of daily dishes...let’s try one such dish today... recipe by Jagruti jhobalia
Steps

Take a pan, add 2 tsp oil and sauté chilli, onion and garlic. Add tomato and sauté till the raw aroma and texture vanishes.

Take another pan, add 1 tsp oil, add mustard, after it splutters add jeera, curry leaves.Add cashews and sauté for 5 to 7 minutes.

Add tender coconut and keep stirring for 5 mins. Add half glass of water. Add salt, turmeric and chilli powder and cook for 5 to 10 mins.

Take the tomato, onion, garlic and coconut mix and grind it to fine paste in mixi jar.add this pAste to curry and mix well.

Your #coconut curry is ready to serve with hot naan or paratha.
