Ingredients

4 servings
  1. 300 gramsChicken thigh, into strips
  2. 180 gramsRice noodle, cooked
  3. 3/4 cupSpring onion, sliced diagonally
  4. 100 gramsBean sprouts
  5. 1/3 cupRough chopped peanuts, toasted
  6. 1/3 cupSweet chilli sauce
  7. 1 tbspFish suace
  8. 1 1/2 tbspLemon juice
  9. Zest of 1/2 a lemon
  10. 1 tbspTamarind purée
  11. 2 tbspPeanut butter
  12. 1 tbspChopped chilli
  13. 2Eggs, whisked
  14. 1/2 cupMint, chopped
  15. Peanut oil for cooking
  16. to tasteSalt and pepper

  1. 1

    Throw chilli sauce, tamerind purée, lemon juice and rind, peanut butter and fish sauce into a jar and shake well to combine.

    Fry chicken and chilli in wok until lightly browned on high heat.

  3. 3

    Add eggs and stir constantly until well scrambled in with chicken.

  4. 4

    Lower temp and add sauce, cook for a couple of minutes stirring well.

  5. 5

    Throw in noodles, sprouts,mint, spring onions and toasted peanuts- (set aside some onion and mint to garnish)mix well and heat through.

  6. 6

    Serve with a slice of lemon- garnish with some mint, spring onion and if you're really brave, some sliced chilli. Yuuuuum!! Serves around 4. Really really good- Enjoy!
