Sieve the flour, baking powder

Rub in the margarine till a sandy texture. Add the sugar

Beat the eggs and add into the mixture till combined. Add the vanilla essence

Add the lemon juice and rind, stir well then add the milk and oil.

Mix all the ingredients together and mix thoroughly until you get a light mixture

Scoop with a ladle spoon and cook in a hot non stick pan till golden brown

Serve with jam, whipping cream or custard sauce
