I’ve always loved amaranthus but the recent enthusiasm of nutricionists and body builder on the plant and seeds countless benefits for the physique and health, as given me a fresh perspective on amaranthus as part of my yummy and healthy diet. ( I grow it at home... it basically grows on it's own if the soil is appropriate). It’s also the cheapest veggie in the market usually.

In a board cut your onion and wash your amaranthus leaves very well. Smash two garlic units and save

Pre-heat a pot for 30seconds and add oil and garlic. Fry for 5~7 minutes until the onion gets gold.

Add your rajah spice and let it fry for 1 minute then gradually add your amaranthus and a very small amount of salt. Let it cook for 7 minutes and enjoy with fish, meet and maize pap.
