Matrimonio Sandwich
Sometimes you just have to treat yourself... and this is one of those times. This is a delicious snack anyone can enjoy.
You can find it in traditional bars in Madrid, especially in the historic Madrid de los Austrias area. A sandwich made with pickled white anchovies and anchovies is called a “matrimonio” (marriage), and if it’s only made with pickled white anchovies, it’s called a “viudo” (widower).

Slice the bread in half and lightly toast it in a toaster or in a skillet. The pickled white anchovies are homemade, but you can find recipes for them in my collection.

Once the bread is toasted, layer the pickled white anchovies and anchovies alternately on the bread. Now you have a delicious Matrimonio sandwich.
