"Brekkie" Tatos

Inspired by all the yummy recipes out there but mainly based on @Saluki15's Crunchy Roast Potatoes recipe. We love the soft flaky goodness of the potaoes with the full flavour of the add-ins. Quick and satisfying breakfast idea.

Scrub potato skins clean, dice, with skins on, into small cubes (around 1/2")

Boil potatoes in lightly salted water until cooked, about 15-20 minutes or so.

While potatoes are cooking, in a non-stick skillet, brown all veggies (except the scallions) with the bacon or sausage until softened and well browned.

Drain potatoes in a strainer and dry out by placing strainer in the empty pot with the lid cracked. Shake to rough edges. (@Saluki15)

Heat oil and butter on med to med/high in a heavy skillet. Add potatoes, let brown for a few minutes before turning, repeat.

Sprinkle spices over potatoes.

Add veggies and meat, gently flip with a spatula.

When browned and crisped to your liking sprinkle scallions over top and serve immediately.
