Fruitcake cookies. Prep time is a few hours, cook time 15-20 mins. This makes a crap ton of cookies, perfect for christmas gifts! I got 15 dozen cookies last time I used this recepie.

2 cupspineapple preserves
1 lb (4 sticks)butter
1 packagelight brown sugar
4 1/2 cupsself-rising flour
3 tablespoonsmilk
1 tablespoonbaking soda
1 teaspoonvanilla extract
3eggs
12 slicescandied pineapple
1 poundcandied cherries (red and green)
2 poundschopped dates
12 cupschopped peacans
2 cupsflour

Cut up candied fruit and nuts and sprinkle with 2 cups of flour.

Cream butter, add sugar, milk, eggs and mix well. Add dry ingredients and pineapple preserves.

Drop by teaspoon on greased cookie sheet. Cook 20 minutes at 325°.

the recipe isn't completely clear on how many cups of flour, i did 2 plain flour in the fruit and nuts and 4.5 cups in the batter, my cookies do not look like the ones in the photo. please let me know if that is correct - waiting to make another batch
