Plantain week challenge continues and since I had very ripe plantains at home, I just thought of making plantain puffs for a quick breakfast before hitting the road for a weekend event.
Plantain puffs are a common street food here in Lagos Nigeria but home made ones are always more yum!! :)

Ingredients

  1. 2 cupsall purpose Flour
  2. 3very Ripe Plantains (blended into a smooth paste)
  3. 1 tbsYeast
  4. 1/2 tspsalt
  5. 1/2 tspcinnamon
  6. 1/2 tspNutmeg
  7. 1/4 cupsugar (you dont really need plenty sugar because of the sweetness of the plantains)
  8. 1 1/2 cupluke warm milk (you.can.use water to.mix in the absence of the milk)
  9. Vegetable oil for frying

Steps

  1. 1

    In a mixing bowl.
    sieve in the flour
    Add.Salt, Yeast, Cinnamon, Nut meg, Sugar
    All the dry ingredient.
    and turn it round.

    Pour in the Warm Milk and mix into a smooth batter.
    mine wasn't water but slightly thick.

  3. 3

    Cover the bowl and allow to rise for about 30mins

  4. 4

    After.30mins,
    open up and turn the batter...
    then.pour in the blended plantain and mix it all...

  5. 5

    Pour enough oil into a deep frying pan...
    Allow the oil to get hot...
    Use your hand and scoop the batter into the oil...
    fry till golden brown

  6. 6

    Once its done, remove from oil and set on paper towel to drain excess oil...
    And Serve and Enjoy...
