Ingredients

  • 2large roasted eggplants
  • 1green bell pepper
  • 1red bell pepper (optional)
  • 2hot peppers (optional)
  • 1tomato
  • 1onion
  • 1little parsley leaves
  • 1/4 cuplemon juice
  • 1/4 cupcrushed walnuts (optional)
  • pinchsalt
  • olive oil
  • pomegranate seeds for garnish (if available)

Steps

  1. 1

    Roast the eggplants in the oven or on the stove, then peel them and place them in a strainer to drain excess water.

  2. 2

    Chop all other ingredients into small pieces and add walnuts or hot peppers as desired. Place them in a bowl.

  3. 3

    Add the roasted eggplant pieces. Then add lemon juice, salt, and olive oil, and mix well to combine. Enjoy!
