Roast the eggplants in the oven or on the stove, then peel them and place them in a strainer to drain excess water.

Chop all other ingredients into small pieces and add walnuts or hot peppers as desired. Place them in a bowl.

Add the roasted eggplant pieces. Then add lemon juice, salt, and olive oil, and mix well to combine. Enjoy!
