Steps

Cream the butter the butter and sugar until soft and light.

Sieve the flour and baking powder twice.

Mix together the eggs and vanilla extract.

Beat the eggs gradually into the butter and sugar mixture.

Fold in the flour.

Deposit into buttered and floured baking tins and level.

Bake @180° for approximately 15-20 minutes.

Turn out on to a wire rack to cool down.

Spread the bottom half with soften jam.
- 10
Place on top sponge and dust with icing sugar.
