Ingredients

1 hour
6 servings
  1. 10Lotus Leaves
  2. 1carrot julienned
  3. 1onion julienned
  4. 1 cuproasted peanuts
  5. 1 packetsTofu - Marinated and Fried
  6. 1 tspbrown sugar
  7. 1 tbspsoy sauce
  8. 1 tspgarlic powder
  9. 1 tsponion powder
  10. 1/4 cuppeanut butter
  11. 1chopped garlic pod
  12. 1/2Juice from lemon
  13. 1 tbspsoy sauce
  14. 1 pinchchilli powder
  15. Water to adjust the consistency
  16. 1 cupcubed ice apples
  17. 5 tbspThai Red Curry paste
  18. 1/4 cupChopped Spring Onions
  19. Oil as required
  20. 1/4 cuptoasted sesame seeds for garnishing
  21. Lemon Wedges for Garnishing

Steps

  1. 1

    Heat oil in a pan. Add the Thai red curry paste and cook for a minute. Add the cubed ice apples and toss well. Set aside.

  2. 2

    Marinate tofu in a mixture of Soy sauce, brown sugar,garlic powder and onion powder. Set aside for atlast 4 hours. Then heat oil in a pan and shallow fry the tofu until crisp.

    Toast the peanuts and the sesame seeds separately until crisp

  4. 4

    Mix together the peanut butter, lemon juice, soy sauce, chilli powder,chopped garlic and chilli powder and set aside.

  5. 5

    Remove the petals of the lotus, clean them well under running water and pat dry.

  6. 6

    To assemble place a lotus leaf on a serving platter,then layer with ice apple, carrot, onion, fried tofu, peanuts, and garnish with sesame seeds, spring onions and drizzle with the peanut soy dipping sauce. The lotus leaves can also be replaced with Lettuce leaves or cabbage leaves.
