Nature has it's unique way of balancing things! On one side we have the scorching sun and on the other the abundance of natural coolants like watermelon and Iceapples!
Our starter today, is a Thai spiced Ice apple on a bed of lotus flowers with varied accompaniments like crisp tofu , peanuts , carrots with a peanut soy dipping sauce!

Our starter today, is a Thai spiced Ice apple on a bed of lotus flowers with varied accompaniments like crisp tofu , peanuts , carrots with a peanut soy dipping sauce!
Steps

Heat oil in a pan. Add the Thai red curry paste and cook for a minute. Add the cubed ice apples and toss well. Set aside.

Marinate tofu in a mixture of Soy sauce, brown sugar,garlic powder and onion powder. Set aside for atlast 4 hours. Then heat oil in a pan and shallow fry the tofu until crisp.

Toast the peanuts and the sesame seeds separately until crisp

Mix together the peanut butter, lemon juice, soy sauce, chilli powder,chopped garlic and chilli powder and set aside.

Remove the petals of the lotus, clean them well under running water and pat dry.

To assemble place a lotus leaf on a serving platter,then layer with ice apple, carrot, onion, fried tofu, peanuts, and garnish with sesame seeds, spring onions and drizzle with the peanut soy dipping sauce. The lotus leaves can also be replaced with Lettuce leaves or cabbage leaves.
