Wash and pat dry the bhindi. Cut both ends and either half or cut into 3 or 4 pieces.

Fry lightly the bhindi and set aside.In the remaining oil sprinkle ajwain and a pinch of hing. Fry 2 medium sized chopped onions till transparent and add the bhindi.

Make a paste of besan, curd,tomato puree, chaat masala,red chilli powder,garam masala,salt and sugar to taste and add it to the bhindi. Sprinkle kasoori methi and toss on low flame.Either cook on low flame or microwave 2 minutes.The taste will be sweet sour teekha and chatpata.Serve with roti, paratha or rice.
