'Mawe tatu' Orange cake

Ingredients

  1. 500 gmsself raising flour
  2. 250 gmsmargarine
  3. 125 gmssugar(You can add more to your liking)
  4. 3eggs
  5. 1/4 cupmilk
  6. Orange essence
  7. 1 tspbaking powder

Cooking Instructions

    Cream margarine and sugar till pale and fluffy

    Add one egg at a time and mix thoroughly till well incorporated

  3. 3

    Add orange essence. I didn't have orange fruit but I would have added some orange zest and its juice

  4. 4

    Add flour and baking powder mix in small portions as you fold into the wet ingredients. I thought of adding little baking powder but you can ignore if using self raising flour

    Pour in your cake batter in a greased baking tin or sufuria

    Take two big sized sufurias. In one of it, place three pieces of stone and make sure they are stable. Put on the fire and make sure it heats well. Then place your baking tin inside it and cover with the other large sufuria.

    Reduce the heat to medium(I used gas cooker)and bake for 60 mins or until a knife comes out clean

    Once cooked,set it aside to cool.
