Ingredients

  1. 8 oz.fettuccine
  2. 1.5 cupsbroccoli, chopped, optional
  3. 5 Tbspvegan butter
  4. 4 oz.vegan cream cheese
  5. 1 cupunsweetened nondairy milk
  6. 3.5 Tbspvegan parmesan cheese
  7. 1.5 tspgarlic powder
  8. 1/2 tspground white or black pepper
  9. 1/8 tspnutmeg
  10. 1/2 cupvegan mozzarella
  11. To taste: salt

Cooking Instructions

    Cook pasta according to package directions, just until al dente, and steam broccoli to desired tenderness, if using.

    Melt the butter in a saucepan over medium heat.

    Add the cream cheese and whisk until smooth.

  4. 4

    Whisk in the milk gradually.

  5. 5

    Mix in the parmesan, garlic powder, ground pepper, and nutmeg.

    Add the mozzarella and continue to stir until it's completely melted.

    Add salt and additional pepper to taste.

  8. 8

    Remove from heat.

    If sauce is too thick, thin with additional milk or some water.

  10. 10

    Toss with al dente pasta and broccoli, if using.
