Ingredients

  • 3 cupslow-sodium chicken broth
  • as neededKosher salt
  • 1 cuparborio rice
  • 2 tablespoonspine nuts
  • 1/2 cupshredded mozzarella cheese
  • 2 tablespoonschopped fresh parsley
  • 2large eggs
  • 1/2 cupgrated parmesan cheese
  • 1 1/2 cupsbreadcrumbs
  • as neededVegetable oil, for frying

    Bring the broth and salt to a boil in a medium saucepan over medium heat,Stir in the rice, reduce the heat to low and simmer until tender, about 15minutes. Spread on a parchment-lined baking sheet and let cool completely.
    Combine the pine nuts, mozzarella,and parsley in a bowl set aside.Beat the eggs in a large bowl, then stir in the cooled rice, the parmesan and breadcrumbs,Shape the mixture into sixteen 1 inch balls, fry till golden brown, cut from middle and garnish according to your choice.
