Khus is a type of a grass known as Vetiver. Sherbet is made by extracting from this grass. Khus syrup is green in colour .This has cooling effect on body and is quiet refreshing in summer.

Khus is a type of a grass known as Vetiver. Sherbet is made by extracting from this grass. Khus syrup is green in colour .This has cooling effect on body and is quiet refreshing in summer.
Steps

Soak Khus grass for 30mins, so that mud settles down.

Wash khus grass 5-6 times or till dirty water is 90% clear.

Keep it aside.

Boil sugar and water in a heavy bottomed vessel.

Remove the dirt from the sugar and throw it.

Add green elachis and khus grass.

Give 3-4 boils.

Switch off the flame.

Cover the vessel with a plate & keep heavy vessel or mortar on it.

Next day mix the sherbet and remove the khus grass.

In a small bowl add little water and edible green colour.

Mix this to the sherbet.

Pour this sherbet in a sterilized bottle.

How to serve.....

Soak sabza seeds for 20mins.

It will swell in size.

In a glasz put 1 tbsp khus syrup ; sabza seeds,ice cubes and water. Stir and serve cold.
