Clean and peel sweet potatoes. Slice them thinly. Keep it in water while slicing to prevent discoloration. Once sweet potatoes are completely sliced, drain excess water

Add freshly salted water to sweet potatoes and rest for 30 minutes. Drain excess water and gently pat dry

Heat oil in a pan. Fry the sliced sweet potatoes in batches. Do not overcrowd the pan. It should be crisp and browned from edges. Fry on medium heat

Allow excess oil to be absorbed by Kitchen towel. While it's still warm, sprinkle pepper or masalas, this can add additional flavour.Toss after you sprinkle. Store in airtight container
