Ingredients

4 servings
  1. 200 gspinach stem
  2. 1long eggplant
  3. 250 gpumpkin/butternut squash
  4. 1medium potato
  5. 15-20 pieceslong beans
  6. 3-4 piecesgreen chilli
  7. 8-10 pieceslantil paste/bori
  8. 1/2 tbspkalonjee/nigella sativa
  9. 4-5 tbspoil
  10. 1/2 tbspturmeric powder
  11. to tasteSalt
  12. 1 tbspsugar

    Cut pumpkin, potato and eggplant into square shape. Cut spinach stem into 2 inches shape. Cut long beans into 1 inch shape. Slit the green chilies.

    In the kadai heat oil and add bori and fry them. Don't burn them.

  3. 3

    In the same oil add kalonjee and then add all the vegetables except spinach stem. Saute them well. Add salt and turmeric powder and mix them well.

  4. 4

    Now cover the kadai with lid and cook them until the vegetables are soft and tender. In the meanwhile add spinach stem and mix them well. Stir the vegetables frequently so that vegetables should not burn.

  5. 5

    Add bori and mix them well. Add sugar and mix them. Check the salt and sugar. Now switch off the gas and serve it with rice/roti.
