  1. 1medium eggplant, peeled
  2. 4 tbspolive oil
  3. 1/2 tsponion powder
  4. 3 clovesgarlic, chopped
  5. 28 ozdiced Italian style tomatoes
  6. 1/2 cupred wine or grape juice
  7. 1/2 cupsliced black olives
  8. 2 tspdried parsley
  9. 1 tspdried basil
  10. 1 tspdried oregano
  11. 1/2 tspsalt
  12. 16 ozpasta of your choice

Cooking Instructions

    Cut eggplant into 1/2 inch cubes. Heat oil in large skillet. Saute eggplant, onion powder, & garlic until eggplant is browned.

    Stir in undrained tomatoes, wine, olives, parsley, basil, oregano, & salt. Simmer the mixture, stirring occasionally, for about 20 minutes.

    While sauce is simmering, cook pasta according to pkg directions. Drain.

    Put pasta back in pot. Pour sauce over pasta & mix well.
