This recipe is a combination of how my friends have cooked eggplant, and how I like to prepare a tomato sauce to accompany pasta.

Easy & simple dish for a cold winter night ☺️ ❄️ Does not take a ton of effort, although the ideal scenario is to start cooking early on, and have enough time to let the sauce cook slowly on the pan.

Ingredients

1h (or longer)
2 servings
  1. 1eggplant
  2. 1/4red onion
  3. Garlic
  4. Herbs: basil & cilantro
  5. 1 canTomato paste
  6. 1 canTomato sauce
  7. Salt
  8. Optional: splash of red wine
  9. 3 spoonfulsGreek yogurt (or other dairy)
  10. 2 spoonfulsketchup
  11. Halfa lime
  12. Parmigiana cheese
  13. Olive oil for cooking

Cooking Instructions

1h (or longer)

    Fry onion, garlic and eggplant

  2. 2

    Add in the tomato sauce and padte, and all rest of the ingredients, and cook slowly for at least 30 minutes. I keep tasting and adjusting the flavors: the dairy brings softness, while the lime and red wine some touches of acid. I ended up letting the sauce cook for an hour, and it tested better, the longer it had time on the pan :-)

    Serve with your favorite pasta with parmigiana cheese.
