Chicken salad with mint and toasted sesame seeds

Ingredients

4 serving
  1. 10cmcucumber
  2. 2boneless,skinless chicken breasts
  3. 3small celery sticks, finely sliced
  4. 3scallions (spring onion) thickly sliced
  5. 2 tbspThai fish sauce
  6. 2 tbsplime juice
  7. 3small red or green chillies, finely sliced
  8. 1 tbspfinely chopped mint leaves
  9. 1 tbsptoasted sesame seefs
  10. 2 tbspsesame oil
  11. Lime wedges to serve

Cooking Instructions

  1. 1

    Prepare the cucumber,cut in half lenghthways and scrape out the seeds with teaspoon. Cut in half crossways then cut each piece into matchsticks

    Bring pan of water to boil,add chicken breast,and poach at a gentle simmer until cook through. Drain let cool

  3. 3

    Shred the meat into small pieces over a bowl,letting any liquid fall into the bowl. Add the cucumber,celery, scallions,fish sauce,lime juice, chillies,mint,sesame seeds and sesame oil,and stir well. Spoon onto a serving platter and serve with wedges of lime
