Ingredients

12whole chives
4 ozgoat cheese
1/2 tspwasabi paste
juice of 1 lime
1asian pear sliced into 12 slices
6 ozsmoked salmon cut into 12 strips
12 piecespickled ginger

Steps

Prepare an ice bath

Bring a pot of water to boil. Add chives and blanch for 15 seconds, then put them in the ice bath

Combine goat cheese, wasabi, and lime juice in a bowl, whisk until smooth
4

Top each piece of pear with the wasabi mixture, a piece of ginger and then the salmon. Tie a chive around each
