Smoked salmon and pear wraps

Ingredients

  1. 12whole chives
  2. 4 ozgoat cheese
  3. 1/2 tspwasabi paste
  4. juice of 1 lime
  5. 1asian pear sliced into 12 slices
  6. 6 ozsmoked salmon cut into 12 strips
  7. 12 piecespickled ginger

Cooking Instructions

  1. 1

    Prepare an ice bath

  2. 2

    Bring a pot of water to boil. Add chives and blanch for 15 seconds, then put them in the ice bath

  3. 3

    Combine goat cheese, wasabi, and lime juice in a bowl, whisk until smooth

  4. 4

    Top each piece of pear with the wasabi mixture, a piece of ginger and then the salmon. Tie a chive around each
