Ingredients

1-2 servings
  1. 2beefsteak tomatoes (regular tomatoes are fine, but you'll need more)
  2. 1large onion
  3. 1/3 cupdiced carrots, or to taste
  4. 10 gramsbutter
  5. 1 teaspoonoil (as a substitute for butter)
  6. 100 gramsground pork/beef (optional), or to taste
  7. 3-4 sprigsparsley
  8. bell pepper (to taste)
  9. cheese (to taste)
  10. 3-4 clovesroughly chopped garlic
  11. black pepper
  12. salt
  13. 1/3 cupwater
  14. 1-2 tablespoonsketchup

Cooking Instructions

    Dice the prepared vegetables. You can chop them coarsely or finely, but slice the onion lengthwise to prevent it from becoming too mushy when sautéed.

    Start with low heat. Once the pot is warm, add butter and sauté the prepared garlic until fragrant.

    When ready, add the prepared pork/beef and season with a little salt and pepper before adding the onion (adding it later keeps it slightly crisp). *Alternatively, if you prefer a sweeter taste, sauté the onion until translucent before adding the meat and seasoning. The onion's juices will add sweetness.*

    Once the meat and onion are ready, add the diced vegetables, but only half of the parsley, saving the rest for garnish.

    This is where we turn the tomatoes into soup. *Increase the heat to medium-high and stir the tomatoes frequently until they break down. The color and juices will create the soup.*

    Add water and a little ketchup to enhance the color and make it more appetizing. (If you prefer a thicker soup, use less water to reduce cooking time.)

    Cover the pot and simmer on low-medium heat, stirring occasionally for 6-10 minutes. The more you stir, the more the tomatoes will break down into soup.

    Once done, serve and garnish with cheese (optional) and the reserved parsley.

    Enjoy with toasted bread or crackers. It's delicious! ^^ Give it a try.
