Nothing helps a long day and a cold winter like grilled cheese and tomato soup. But when you want to make a comforting, gooey grilled cheese and you make the horrible discovery that you have no tomato soup the world seems a little darker. But no worries! With a little scouring in the pantry you can whip up that old comfort food like no can could ever offer. I paired it with a cheddar grilled cheese on 12 grain with a bit of oregano. Hope it warms your tummy too!

Ingredients

  1. 2 tbspolive oil
  2. 1onion, chopped
  3. 2 tbspall-purpose flour
  4. 3 cupchicken broth
  5. 1 candiced tomato (Italian)
  6. 1tomatoes, finely diced
  7. 1 cuppasta sauce (such as Ragu tomato and basil)
  8. 1 tspsugar
  9. 1salt and paper to taste
  10. 1 clovegarlic

Cooking Instructions

    In a large pot heat oil.

    Add onion and garlic, cook until soft but not browned

  3. 3

    Add flour and stir.

  4. 4

    Add all other ingredients and bring to a simmer while stirring.

  5. 5

    Reduce heat and simmer for 40 minutes.

    Use immersion blender to puree. If you do not have an immersion blender use a standard blender to puree in batches but be sure to take off center cap and replace with a damp cloth to allow steam to escape.

    Season with salt and pepper. Best served with grilled cheese!!
