In Mexico, this delicious snack varies by region. In many states and towns, you'll find different ways to make it. I'll try to share more versions, but today I'm giving you this super basic recipe with easy-to-find ingredients.

Rinse the corn kernels thoroughly. In a small pot, melt the butter and add the onion and garlic. Once they turn translucent, add the corn kernels and the green chili pepper, sliced in half and seeded (leave the seeds in if you like it spicy). Stir to lightly sauté and add salt.

Once the corn is slightly golden, add the water and bring to a boil. Add chicken bouillon powder to taste (I like it a little salty).

When the corn kernels are tender (about 10 minutes, but taste to check), serve in bowls or cups.

Add lime juice.

Now you have two options, depending on your preference. Option 1: Add chili powder and salt if you like.

Option 2: After the lime juice, add mayonnaise, cheese, chili powder, and salt if you like.

Whether you add mayonnaise or not, you'll love it!

Note: If you add a sprig of epazote when it starts to boil, it will have even better flavor, but I didn't have any.
