Ingredients

  1. 5 piecesChicken thighs
  2. 1/2 cupcoconut milk (I used kentaste coconut milk)
  3. 2large ripe tomatoes
  4. 2onions
  5. 1green cupsicum
  6. 1/2 tspTurmeric powder
  7. 4 clovesgarlic
  8. 1/2 tspginger powder
  9. 3 tbspcooking oil
  10. 1/2 tspsugar
  11. 1level tsp salt
  12. 1/4 cupwater
  13. More oil for deep frying. (optional)

  1. 1

    Deep fry the chicken pices until crispy and set aside. This is optional. I do this when using broiler chicken.

  2. 2

    Dice the onions and grate/mince the garlic

  3. 3

    Blend tomatoes and cupsicum together to a paste. (You can also slice and dice into small pieces if you don't want to blend.)

  4. 4

    In a cooking pot on medium heat add the 3tbsp oil and allow it to heat.

  5. 5

    Add onions and garlic and cook for few seconds, add ginger, turmeric, and sugar and continue to stir. Add salt then the tomato capsicum paste, stir, cover and let cook for about a minute.

  6. 6

    Once ingredients are well cooked add in the water first then coconut milk then add in the chicken pieces. Cover and cook for 3-5minutes then stir in to cook chicken on all sides for another 5 minutes.

  7. 7

    Garnish with corriander leaves (optional) and serve with rice or chapatti

  8. 8
