I use butter flavored shortening and walnuts or leave the nuts out.

1/2 tsp.soda
1/2 tsp.salt
1/4 tsp.cinnamon
1/2 c.shortening
1/4 tsp.nutmeg
1 c.sugar
1egg
3/4 c.banana, diced or mashed
1-3/4 c.oats
1/2 c.chopped nuts

Steps

Mix dry ingredients. Cream the shortening and sugar together, add the egg and the banana. Add the dry ingredients stir well.

Drop by teaspoonful onto cookie sheet. I line my cookie sheets with parchment paper.

Bake at 375°F for 13 to 15 minutes. Makes about 3 dozens, depends on size.
