Hilsa pulao
A favourite rice recipe in contemporary Bengal
Steps

Boil rice hard and drain out the water. Set aside.

Chop onions into fine slices.

Heat ghee in a frying pan and slightly salute the Hilsa(cut into medium sized pieces).Set aside.

Add some more ghee and gently fry together bay leaves,cinnamon and cardamoms.

Gradually add chopped onions and fry golden brown..

Add rice with salt and sugar and turn upside down.

Make alternative spaces with a spatula and set in the fish pieces.

Add cashew and milk.Mix well and seam on a lower flame before turning off and serving hot.
