Ingredients

  1. 1 tbspolive oil
  2. 2bellpeppers thinly sliced
  3. 1onion chopped
  4. 10 ozsliced mushrooms
  5. 1/2 cupwhite wine
  6. 1 tspchopped fresh thyme leaves
  7. 6skinless boneless 4 oz fillets of snapper sole or flounder
  8. 2 tbsplemon juice

    Preheat oven to 450°F

  2. 2

    Heat oil in a skillet over medium heat. Add peppers and onion, cook until tender about 10 min

  3. 3

    Add mushrooms, wine, and thyme and cook for 3 min

  4. 4

    Place fillets in a greased baking dish, folding under narrow ends. Sprinkle with lemon juice, salt and pepper

  5. 5

    Spoon vegetable mixture over fish. Bake 15 to 18 min until fish is opaque throughout
