Soak rice for 30 minutes. After 30 min pressure cook rice with 1.5 cup water.

Meantime heat a wok and put 1 teaspoon oil in it. Roast dry red chilli, chana dal, urad dal, fenugreek seeds, coriander seeds, Poppy seeds, cinnamon, cloves cardamom and grated coconut for 1 minute. After one min turn off the flame and grind this mixture after cooling it down. This is called vangi bhaat powder.

Now cut brinjal lengthwise and dip it in water.

Again heat a wok put one tablespoon oil in it. Once heated. Add mustard seeds, cumin seeds, chana dal, urad dal, curry leaves asfoateida Green chilli and dry red chilli. After it add brinjal, peanuts and tamarind extract in it. Fry for 5 minutes.

Now add vangi bhaat powder jaggery, salt and turmeric powder in it. Fry for two minutes.

Now add cooked rice in it and mix it well. Now turn off the flame.

Your vangi bhaat is ready. Enjoy it with your favourite curry or raita.
